Consumer demand for antioxidant-rich fruits has enhanced in recent years due to their potential health advantages. Berries, including red raspberries, are rich in variousantioxidant compounds such as anthocyanin, flavonoids, tannins, stillbenoids, phenolicacids, lignans, triterpenes, and sterols.
